This yummy smoothie packs a serious punch of Vitamin C. It’s also delicious and simple – the perfect recipe for those new to blending up fruits and veggies.
The recipe comes from the new cookbook, Vibrant Life Cleanse Program and Cookbook, from Leanne over at Healthful Pursuit. It’s a fabulous resource – over 160 pages full of juice and smoothie recipes, a huge section on blending and juicing how-to’s, daily tips, and tools, as well as cleanse programs and shopping lists. I recommend it to everyone I work with as it’s great for those who just want more recipes and information on juicing/blending, and/or those who really want to do a cleanse (there are several cleanse programs included!). Smoothies have become my go-to mid-morning snack. Just pop ’em in a glass jar (I have save my old nut butter and jam jars) and keep in the fridge for up to 48 hours. They tide me over until lunch, and are an incredibly quick and easy way to get more servings of fruits and vegetables in!

- 1 Cup Water
- 1 Banana (I sometimes use a frozen banana, YUM!)
- 1 Orange
- 1/2 of a Fresh Mango
- 1 Cup Packed Spinach
- Add all ingredients to your high-powered blender in the order they are listed.
- Blend on high for one minute or until smooth.
- Transfer to a glass a serve immediately.
- To store, pour in a glass container and keep in the fridge for 1-2 days. Alternatively, pour into a plastic container and freeze for one month.
- (I pour into glass jars (re-use old nut butter and jam jars) and take it to work with me for snacks!)
