Gluten-free, Sugar-free BBQ Chicken Pizza (Dairy-free with Modification)

This BBQ Chicken Pizza is definitely tailgate worthy. Great game day eats! It’s also a must-have for Superbowl parties!

I tailored an old classic to be free of gluten, sugar, yeast, and grain (if you use the cauliflower crust). It’s also dairy-free if you choose to use a non-dairy cheese. I’m thrilled that I recently found out about Caveman Bob’s Paleo BBQ Sauce which has no added sugar (most BBQ sauces have a lot of sugar), instead getting its sweetness from apples. I was so excited to order some that I knew I had to test it out immediately and make a BBQ Chicken Pizza. Good thing I did because my hubby liked the BBQ sauce so much he’s been stealing it!

Time-saving Tips:

  • I use a cauliflower crust based on this recipe (also used in my Veggie Lover’s Cauliflower Crust Pizza) to make the crust. As I remarked in this recipe, I make 2-4 crusts at one time and stick them in the freezer, which makes this BBQ Chicken Pizza a breeze! See below for recipe. (Update 1/29: I’ve started microwaving the cauliflower instead of boiling/steaming to save time and it works fine!)
  • If you’re short on time or you don’t want to use a cauliflower crust, use a gluten-free brown rice tortilla (most super market chains have them)!  See below for recipe.
  • Grab a plain rotisserie chicken at the store – you’ll get 2 large breasts ready to be shredded, no cooking necessary. You can then use the rest of the chicken in other meals throughout the week. Note: I recommend buying certified organic chicken to steer clear of antibiotics, hormones, and other nasty things that you definitely don’t want to be eating.

This pizza is perfect for game day snacks or a great lunch or dinner anytime.

Gluten-free, Sugar-free BBQ Chicken Pizza on Cauliflower Crust (Dairy-free with modification)

Serves 2 as a main (or more if you slice it as game day appetizers/snacks)

Note: these measurements may vary depending on the size of your crust as each cauliflower crust may be different. Use your best judgement and add/subtract if you need. You may end up with more chicken than you need, which can then be used to top salads or sandwiches!

1 Roasted Chicken Breast, Shredded (Roast your own chicken breast or use breasts from a plain rotisserie chicken. Use a fork or food processor to shred the chicken.)

1/2 Cup BBQ Sauce (I used Caveman Bob’s Paleo BBQ Sauce because it has no added sugar. If you’re not concerned about sugar, use your favorite BBQ Sauce)

1/2 Cup Cheese, Shredded + More for Sprinkling on Top (I used raw, local, organic goat cheddar. If you can’t tolerate goat cheese, use a cheese alternative – I suggest Daiya)

1/4 of a Small Red Onion, Sliced Thinly

1/4 Cup Cilantro, Chopped

Preheat oven to 400 degrees.

Make your cauliflower crust or take out a pre-made frozen cauliflower crust and put it on a baking pan lined with parchment paper. If you’re using a frozen crust, it will thaw a bit as you prepare the rest of your ingredients, but don’t worry if it’s not thawed all the way as it will cook in the oven.

Mix the shredded chicken with a little less than 1/4 cup of BBQ sauce until well-combined and store to the side.

Spread a thin layer (a little less than 1/4 cup) of BBQ sauce on the crust.

Sprinkle 1/2 cup of shredded cheese on top of the BBQ-smothered crust.

Top with the shredded chicken that was mixed with BBQ sauce. Add red onion then sprinkle a bit more cheese on top.

Bake for 13-15 minutes until the cheese is melted and oozy. Keep an eye out after about 10 minutes to make sure it doesn’t burn. Top with chopped cilantro and enjoy!

Same process as above except for cooking time. I heated it on the “toast” setting in my toaster oven for about 4-6 minutes. The wraps are thin, so be careful that they don’t burn. Alternatively, you could bake it in an oven on very low heat until browned and the cheese is melted.
