Halloween is just a few days away and this green smoothie is the perfect way to get in the spirit! The frozen banana lends a wonderful creaminess and the frozen mango gives it a hint of sweetness without any added sugar.
As I mentioned in my last post, I’ve been inspired by the fun variety of pumpkin smoothies floating around the internet and knew I wanted to experiment making my own. I love to add greens to my smoothies so I figured I’d give it a go and see what it was like to combine pumpkin, greens, and other fruit. The results were fantastic with rave reviews and requests for more. My husband loved that that it tasted like a yummy green smoothie with a hint of pumpkin and fall spice. I hope you enjoy this as much as my family does!
Pumpkin Spice and Everything Nice Green Smoothie (Gluten-free, Dairy-free, Sugar-free)
Makes about 2 1/2 cups of smoothie
1 and 1/4 Cup Unsweetened Coconut Milk (from a carton, not canned) or other non-dairy milk
2 Handfuls of Fresh Spinach
1/4 Cup of Pureed Pumpkin
1/4 Cup Frozen Mango Chunks (Update 11/13: it also tastes amazing with frozen pineapple!)
1 Frozen Banana (chopped into chunks, see note below)
1/2 Tsp Vanilla Extract
1/4 Tsp Pumpkin Pie Spice
Optional toppings: cinnamon, pumpkin seeds, and walnuts
Put all of the ingredients into the blender (put the coconut milk in first) and blend together until creamy. Add more liquid if needed.
After blending together, taste it. If you want it to be sweeter, add a bit more frozen mango, banana, or a drop of your favorite sweetener. Pour the smoothie into glasses or jars and top with a sprinkle of cinnamon, pumpkin seeds, and walnuts.
- Peel and chop spotted bananas into chunks and then freeze so they’re always on hand.
- If you don’t drink it all at once, store it in a glass jar (mason jars work well or re-use nut butter jars) in the fridge. When ready to drink, simply shake it up!
