A Couple of Easy, Yummy Apps:
So fresh. Add some extra lime and jalapeño for that zest and zing! Pair with your fave chips or cut-up veggies.
Short on time? Set out a variety of fresh vegetables, a big vat of hummus, and some roasted sweet potato chips, plantains, or other gluten-free crackers. I like Mary’s Gone Crackers, Brad’s Raw Kale Crackers, or Chip’ins.
Mains and Sides:
Mustard lovers, this ones for you. The champagne vinegar gives this healthy, no-mayo potato salad a crisp twist. And, the tricolor potatoes are absolutely gorgeous.
Roast or grill your eggplant buns while you’re grilling your burger then pile on the toppings! I love the eggplant bun because it tastes and functions better than a ‘lettuce bun’, and is more nutritious than the gluten-free buns/breads out there.
This beautiful salad would make a great full salad option, or take out the lentils and it’s a great side! The creamy avocado and jalapeño are amazing together and the peaches add some sweet shine. Yum!
This delicious combo features a lovely, light basil dressing that goes perfectly with the spicy arugula and roasted (or grilled) eggplant. Leave the cheese out for a dairy-free, vegan recipe.
Try this new twist on the classic bean salad that you frequently see at bbqs. The lemon perks this salad right up, the added artichoke and kalamatas give a Mediterranean flare, and the almonds provide a nice crunch. DE -LISH!
